Beefy Mushroom Pot Pie
BEEFY MUSHROOM POT PIE
Ingredients:
1-pound Beef, ground
1-medium Onion, finely chopped
2-cups Mushrooms, fresh
2-tablespoons Butter
1-can Cream of Mushroom soup
4-deep dish Pie shells
¼-teaspoon Pepper
½-teaspoon Salt
¼-teaspoon Garlic powder
Instructions:
Place beef in large skillet and brown; in a small skillet sauté onion, butter, garlic powder and mushrooms; mix onion mixture with beef. Add remaining ingredients and mix well.
Bake 2 empty pie shells for 6 minutes at 400°. Remove baked pie shells and let cool for ten minutes. Pour beef mixture into baked pie shells. Take the other pie shells and mold over the top of beef filled pie shells. Make three small slices in the top of pies and bake for 35 minutes at 400° or until pie shell is golden brown. Bake both pies or bake one and freeze one for later.
1 pie serves 5
Note: I have also made this with 2-cups of chopped left over pot roast in place of the ground beef. Another great way is to replace the ground beef with left over pork roast chopped up and replace Cream of Mushroom soup with Golden Mushroom soup.

If you are from Minnesota, North, or South Dakota, the title says it all. If you are from anywhere else in the United States, this is a casserole. Whoever invented this particular dish is to be commended, since it is one of the tastiest and most beloved hotdishes in the Midwest. It is a really good comfort food, and as is usually the case with such dishes, tastes just as good if not better when reheated. This is one casserole that little kids seem to enjoy just as much as the adults do.
Aside from the name, there are a few other differences between a casserole and a hotdish. While the hotdish generally uses some cream-based soup as a binder, the casserole uses pasta or flour. Both have a crunchy topping, and both contain meat of some sort, and vegetables. The casserole uses a much wider variety of meat, while the hotdish almost inevitably contains hamburger. Both are cooked uncovered.
Highly Addictive Tater Tot Hotdish
This tater tot hotdish recipe is anything but bland. Because the primary ingredients can be quite bland, this recipe relies on several unusual ingredients to jazz things up. As always, the cook should make their own changes based on personal preferences.
What You Will Need:
2 pounds ground round 2 cans cream of mushroom soup 1 bag frozen mixed vegetables 1 bag tater tots, thawed Worcestershire sauce Soy sauce Minced garlic Red pepper or red sauce Chopped onion (can be bought frozen, use as much as desired) You will also need a large skillet for browning the meat, and an oversized baking pan (13 x 9 has a tendency to not be big enough, so use either the next size up or a high-sided 13 x 9 pan).
How To Make It:
Preheat the oven to 350°.
Start grounding the hamburger, adding the sauces, garlic, and onion to taste. This will give the hamburger a very robust flavor, which will help alleviate blandness. You may also add those sauces to the cream of mushroom soup. Do not salt, because cream of mushroom soup is very high in sodium, as is the soy sauce.
Drain the hamburger completely, and place it in a very large bowl. Add the soup and mixed vegetables. Stir thoroughly, and place in the greased (or sprayed) pan. Completely cover the mixture with tater tots, and bake for one hour.
Cheeseburger Tater Tot Hotdish
Before removing from oven, cover hotdish with 12-16 ounces of shredded cheese. Close oven door and let sit until cheese melts, roughly 5 minutes (keep a close eye on it).
Remove from oven and let set for 5-10 minutes.
Side Dishes

How to Make It
Using a large saucepan or skillet over a medium heat, you will add the vegetable oil, butter, or margarine to melt. Add the thinly sliced celery stalks, the chopped green onions and minced garlic cloves. Stir to combine and then saute for about 5 minutes or until the vegetables are tender.
Slowly stir in the chicken broth, the shredded cabbage, thinly sliced carrots, cooked shredded corned beef, salt and pepper. Stir well and then cover with a lid. Bring to a boil and cook for about 2 minutes and then reduce the heat to the lowest setting. Simmer, while occasionally stirring for about 20 minutes or until all the vegetables are tender.
Using a small mixing bowl you will add the cornstarch and the milk and stir to combine well. Gradually stir this mixture into the meat and vegetables you are cooking. Increase heat to medium and bring to a boil while constantly stirring. Boil for about 1 minute and then remove from heat. Allow the corned beef and cabbage soup to cool for several minutes before serving to friends and family.

BEEF AND RICE HOT DISH
1 lb hamburger meat
1 med onion, chopped

1 can (14 1/2 oz)stewed tomatoes
1 can (8 oz) tomato sauce
1 1/2 cups hot water
1 tsp prepared mustard
In a large skillet, brown hamburger meat and drain. Add onion, green pepper, salt and pepper to skillet and cook over medium heat until vegetables are tender. Add remaining ingredients; bring to a boil. Reduce heat; cover and simmer for 10 minutes. Serves 4.
TURKEY NOODLE CASSEROLE
2 cups cooked, drained noodles
1 tbsp margarine, melted
5 tbsp grated Parmesan
4 to 5 slices cooked turkey
1 cup milk
1 cup shredded Cheddar cheese
Mix noodles, margarine, and half of the Parmesan cheese. Pour into a greased baking dish. Top mixture with turkey slices. In saucepan, heat milk and Cheddar cheese until cheese melts. Pour over turkey and top with remaining Parmesan. Bake at 350 degrees for 40 minutes.
TAMALE PIE
2 lb hamburger meat
2 medium onions, chopped
1 tbsp chili powder
1 bell pepper, chopped
1 cup vegetable oil
2 tsp red pepper
1 1/2 tsp salt
1 can whole kernel corn
1 can diced tomatoes
2 cups corn meal
1 cup milk
3 eggs
In a large skillet, brown hamburger meat in oil with onions, chili powder, bell pepper, red pepper and salt. Do not drain. When meat is brown, add corn and tomatoes. In a large bowl, mix corn meal, milk, and eggs. Add skillet mixture and mix well. Bake in a greased 9 x 13-inch baking pan for 30 minutes or until done at 375 degrees.

These gatherings bring back great memories for us and can even start our mouths watering for those old favorites of our past.
Here's a favorite hotdish recipe that was a staple at our church basement festivities. It's easy to make, a real crowd-pleaser, and uses everyday ingredients. This casserole contains healthy food groups so you can feel good about serving this all-in-one dish piping hot to your friends and family.
Add a favorite sweet salad that was all the rage in the 1960's in my North Dakota hometown. It was served as a salad, but it could easily pass for desert with its light, fluffy, fruity base. Try it out and see what you think.
Favorite recipe #3 is for dessert. We always had dessert at our family reunions and church dinners! Rhubarb is a must for a great dessert in our Scandinavian homes. Rhubarb Crunch can be served warm or cold with whipped topping or ice cream. Or delicious all on its own!
Six Layer Dinner
Serves 8.
2 lb. hamburger
4 potatoes
4 full-size carrots
1/2 c. dry rice--white or brown
4 onions
1 lg. can tomatoes
1 can tomato soup
1/2 tsp. salt
1/4 tsp. pepper
1 Tbsp. sugar
1/2 c. water
Fry hamburger in skillet. Set aside. Spray large casserole with oil. Add the following items in layers and in the order given:
Peel and slice 4 raw potatoes. Place in casserole in Layer #1.
Clean and slice 4 raw carrots and place on top of potatoes as Layer #2.
Rinse rice and sprinkle over carrots. Layer #3.
Add fried hamburger on top of rice. Layer #4.
Clean, peel, and slice 4 onions. Place over hamburger. Layer #5.
In small bowl, mix tomatoes, tomato soup, salt, pepper, sugar, and 1/2 c. water. Pour over onions. Layer #6.
Cover and bake in the oven at 350 degrees F for 1.5 hours.
Cherry Berry Salad
1 can cherry pie mix
1 small can crushed pineapple, undrained
1 can sweetened condensed milk
1/4 c. lemon juice
1 tsp. almond flavoring
2 c. whipped topping
Gently mix all ingredients together and chill overnight or for several hours. Delicious as a salad or desert. A drop of food coloring gives it a pleasant coloring for the plate.
Rhubarb Crunch
2 c. diced, cleaned rhubarb
6 T. flour
1/4 c. oatmeal
3/4 c. sugar
1/4 c. brown sugar
1/4 c. butter or margarine
Arrange rhubarb in greased 8x8 baking dish. Mix other ingredients until crumbly. Sprinkle this mixture over rhubarb. Bake 40 min. at 325 degrees F. Cut into 9 pieces and serve warm or cold.

1 cup water
6 oz can tomato paste
2 cans (16-oz each) French-style green beans, drained
1 jar (2 1/2-oz) sliced mushrooms, drained
1/2 cup shredded cheddar cheese
Preheat oven to 350 degrees.
Brown ground beef in a large skillet; drain off all fat. Stir in the seasoning mix and water and cook until thickened. Add tomato paste. Cover the skillet, lower the heat to simmer and simmer for 10 minutes. Stir in the beans and mushrooms. Pour mixture into a lightly greased 2-quart casserole dish and top with the cheese. Bake at 350 degrees for 20 to 30 minutes until bubbly and heated through.
Yield: 6 servings
SIMPLE HAMBURGER HOT DISH
This recipe is from a very old community cookbook.
1 pkg (8-oz) egg noodles
2 lbs ground beef
2 cans cream of mushroom soup, undiluted
1 med onion
8 slices cheese
salt and pepper to taste
Preheat oven to 300 degrees.
Cook noodles in salted boiling water, drain and rinse. Brown ground beef and onion together, season with salt and pepper. Mix noodles, meat, and soup together and put in a 9x13 lightly greased baking pan or dish. Lay the cheese over the top. Cover the pan with foil and bake 30 minutes at 300 degrees or until the cheese melts and the casserole is bubbly.
Serves 8 to 10.
